When it comes to candy bars, I’m a TWIX® girl through and through, so imagine my excitement when MARS released their newest product, TWIX® Bites! Oh the things I could do with them! But there’s another person in the family who loves TWIX® almost as much as I do, my father-in-law. Not only does he love his TWIX®, but he also loves his icebox cakes, so why not combine the two! Icebox cakes are perfect in the summer time for three reasons:
1. They’re a cold dessert.
2. They’re a no bake dessert – Yay for not turning on the oven, am I right?
3. It’s cake… do you really need any other reason?
When I was picking up a few things at Walmart last week, these fun little TWIX® Bites were teasing me at every turn, of course I couldn’t just get one bag, so I picked up two (not that the second lasted much longer than the first). I wanted my icebox cakes to look just like the TWIX® Bites, so I picked up a few other ingredients and home I went to whip up something delicious! And delicious it was! I think I love TWIX® so much because they’ve got that cookie crunch, the gooey caramel, and let’s not forget the sweet milk chocolate. These TWIX® Bites have the perfect ratio of every element! They come in a resealable bag too, which is perfect for me because I can never finish a full candy bar!
Yields 4 Mini Icebox Cakes
A fun no bake dessert that tastes just like a TWIX®!

Ingredients
- 1 6 oz.bag TWIX® Bites
- 1 bottle Magic Shell
- 1/4 cup Milk Chocolate Chips
- 16 Graham Cracker Squares
- 1 cup Heavy Cream
- 1/4 cup Confectioners' Sugar
- 3 tbsp Instant Vanilla Pudding Powder
- 8 tbsp Caramel Sauce plus additional for topping
- Wax Paper
Instructions
- Melt chocolate chips in microwave on 30 second intervals, stirring in between until chocolate is melted.
- Dip the bottom of 4 of the graham crackers squares in the melted chocolate and place on wax paper on a cookie sheet to harden (see photo below). This base will help insure that your cake doesn't get too mushy.
- While base hardens, combine heavy cream, vanilla pudding, and confectioners' sugar in a mixing bowl and whip until light and fluffy.
- Transfer cream to a piping tool or use a spoon to evenly disperse on top of the first graham crack of each cake as shown in the photo.
- Take another graham cracker square and press down lightly to secure it to the cream, try to keep you levels in line.
- Continue this for two more layers.
- On the last layer, pipe around the edge a second time, leaving a bit of a hole in the middle of the cream.
- Add about 2 tbsp of caramel sauce into each hole, lightly press another graham cracker square on top, don't press to hard or the caramel will seep out.
- Use a knife to fill in any gaps in the layers with extra cream.
- Coat cakes with magic shell and top with chopped TWIX® Bites and caramel sauce and put in the freezer for about 5 minutes for magic shell to harden.
- Transfer to fridge for at least 3 hours before serving.
My father-in-law loved the cake, he walked into the house and spotted them on the island and said, “What are these?”. It didn’t take long before he dived into one! I love how a couple hours in the fridge can turn a stack of whipped cream and graham crackers into a silky and soft cake that will just melt in your mouth. The magic shell and TWIX® Bites add the perfect amount of crunch to top off this delicious treat and make it the perfect dessert to finish off your Father’s Day Celebration or weekend BBQ!

Tell me a good way to get the magic shell to cover evenly, mine just dripped to the bottom,befor it could freeze. Also, will they keep overnight without getting soggy?

It’s a little bit thicker than the store bought so I was ale to use a spoon to spread it around the cake before freezing.
We’ve used the store bought too and it doesn’t go on as thick, like you said it can be runny. It can be helpful to chill the cakes for a half hour or so to help the magic shell stick better.
Icebox cakes are meant to get soggy/cake like, but should still hold their form. These are best eaten within two days of preparing.
