 Nana’s Apple Chai Cake is a sweet spice cake loaded with chunks of apples and crunchy pecans and topped with a whipped vanilla chai frosting and it’s so easy to make thanks to Tastefully Simple!

 Fun little fact, I used to be a Tastefully Simple consultant. During college it was a great way to feed myself and put a little extra cash in my pocket. I’ve always loved the products and I’m slightly addicted to their Garlic Garlic, who’s with me? Since I’m throwing an online party, I thought it would be fun to make a recipe using the products and share it here on the blog! The Nana’s Apple Cake is one of my favorite products, I love the big chunks of apples and the crunch of the nuts! I also love their Oh My Chai which they have replaced with the new Vanilla Chai, so of course I had to “chai” it out, I crack myself up! Anyways, I decided to combine the two and make this Nana’s Apple Chai Cake.

 It’s a tasty fall dessert that’s super easy to make thanks to the Tastefully Simple products, I love that tastefully simple recipes are made with just 1 or two extra ingredients. It makes them great for stressful holidays and busy weeknights! But this cake was just a nice Sunday afternoon treat after a game of Koob. The apple and pecan stuffed cake topped with that silky whipped vanilla chai frosting was so tasty and it would be a great alternative to apple pie at Thanksgiving, oh who am I kidding, you can’t replace the apple pie… but you can have both 😉

Nana’s Apple Chai Cake

Ingredients

    Cake:
  • 1 box Tastefully Simple Nana's Apple Cake Mix
  • 2 Apples (Chopped)
  • 2 Eggs
  • 1 cup Chopped Pecans
  • Frosting:
  • 1 cup Heavy Cream
  • 4 tbsp Tastefully Simple Vanilla Chai Mix (dry)
  • 1/4 cup Confectioners' Sugar
  • 3 tbsp Instant Vanilla Pudding Mix (dry)

Instructions

    Cake:
  1. Preheat oven to 350 F.
  2. Grease an 8 x 8 baking pan.
  3. Combine cake mix, chopped apples, and eggs in a large bowl and mix until a batter forms.
  4. Add in pecans and pour into baking pan.
  5. Bake for 50-55 minutes.
  6. Test with a toothpick, remove from oven and allow to cool.
  7. Prepare frosting by combining all ingredients in a stand mixer or large bowl and beating until light and fluffy.
  8. Spread frosting over cake and enjoy!

Notes

You can omit the pecans or substitute them for your favorite nuts.
