This Almond Joy Rice Pudding is perfect for when you want to indulge a little, but keep it light.
Did you guys know that August is Health Awareness month? It kind of makes sense when you think about that fact that we’re heading into a pretty crazy time of year with busy schedules and tempting treats. I love when companies embrace months like this and give back to the community and Sam’s Club is doing just that! Not only is Sam’s Club offering free in store health screenings on September 12th, but did you know they have their own magazine called Healthy Living Made Simple? This month, the magazine featured food is COCONUT!
Now, I don’t know about you guys, but I ABSOLUTELY L-O-V-E the duo that is chocolate and coconut. First of all, coconut in itself is one of my favorite things ever! It’s so versatile when it comes to cuisine and health/beauty care. You can’t help but love something that can both keep your skin feeling silky smooth and make a Piña Colada, am I right?
But something truly magical happens when you combine coconut with chocolate. It’s like the tropics meets Europe in a powerful explosion of flavor. Okay, okay, I’m being a little over the top, but I trust you get the idea. Now don’t even get me started on adding almonds into the mix. Oh, you just had to do it didn’t you?
The trio that is coconut, chocolate, and almonds (more commonly known as Almond Joy after the candy bar) is pure perfection. So of course I’m going to find a way to work it into anything and everything. Since making rice pudding for the first time back in January, I’ve become rather addicted to the stuff and I love making new flavor combos for the toppings. In this case, the chocolate begins to melt into the soft coconut rice pudding and the almonds and shaved coconut add the tiniest bit of crunch!
I love rice pudding because I can indulge a little without loading my body up with sugar. Speaking of sugar, have you seen this bag of Organic Coconut Sugar at Sam’s Club? It’s huge! I loved adding it into my Almond Joy Rice Pudding for a little extra coconuttyness (Yes, I do believe I just made that word up). When you stop in for your free health screening, be sure to pick a bag up and don’t forget to grab a jumbo tub of coconut oil or a bag of coconut flour for all your gluten free baking while you’re at it! Almond Joy Rice Pudding
- ½ cup Arborio Rice
- 2 tbsp Coconut Sugar
- ½ tsp Vanilla Extract
- 1½ cups Water
- Dash of Salt
- ¾ cup Canned Coconut Milk full fat
- Combine rice, coconut sugar, vanilla, water, and salt in a small sauce pan and bring to a boil.
- Make sure coconut milk is well mixed before measuring as it can separate while being stored. Add coconut milk to boiling rice and simmer for about 25 minutes stirring occasionally so rice doesn't burn to the bottom of the pan.
- Once rice is done, scoop into 4 bowls, top with toppings.
