Alright guys, I’ll give you the recipe to Carol’s Walking Dead Cookies, but you can’t tell anyone…

If you’re a walking dead die hard like me, then Carol is quickly working her way past Daryl in your heart. Who would have thought that was even possible! Underneath the cardigans, she proved that she’s still got it after her little confrontation with Sam! By being undercover, she’s definitely the most dangerous character on the show right now.
I promised you guys that I’d do my own take on AMC’s recipe for Carol’s Cookies, so here it is! I thought it would be perfect to post right before the finale, something tells me we might all need a plate of cookies and a pint of Ben & Jerry’s to console us when it’s over.
They say it’s going to be a crazy one, any of you have any predictions on what’s going to happen? I follow the comics so I have a basic idea, but the show doesn’t follow them entirely, so anything could happen! Either way, the last couple episodes have given us back the action we were lacking after the show started back up in February. And clearly, Rick’s going a little crazy again – only now instead of talking to ghosts, he’s turning into Shane – oh joy!
Regardless of crazy Rick, I’m excited to see how the rest of the cast fares in the finale in Alexandria. However, if Daryl or Carol dies… WE WILL RIOT!
Okay, okay, on to the important stuff!
I only slightly adapted the original recipe. I used butter instead of the shortening, I know I’m probably dreaming that there’s dairy in the Zombie aftermath, but I’m a believer! I also didn’t melt the chocolate down, I thought little chocolate bits would make them more like chocolate chip cookies.
Now, these cookies aren’t amazing or anything, but they’ve got a great old fashioned flavor. I think they definitely could have used that other 1/4 chocolate bar that Carol stole, so you can always add that in. They’ve got a cake like texture and perfectly crisped edges. Overall, they’re a damn good cookie when you’re living amongst The Walking Dead.
Carol's Walking Dead Cookies
- Preheat oven to 350 F.
- Cream butter and sugars together with a paddle attachment.
- Add in applesauce and vanilla extract and whip until fully combined.
- Add in flour, baking soda, baking powder, salt and mix until fully combined.
- Let cookie dough sit for 3-5 minutes.
- Add chocolate bar to a food processor and pulse until fine crumbs.
- Add chocolate to cookie dough and whip just until combined, about 5-10 seconds.
- Use a medium cookie scoop (1.5 tbsp) to place dough onto a parchment lined baking sheet about 2 inches apart.
- Bake for 11-13 minutes.
- Let cool on pan.
