Ingredients

  • 1 tablespoon olive oil
  • 1.5 pounds chicken breast diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the sauce:

  • 1 tablespoon sambal oelek
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1/4 cup brown sugar
  • 1/2 cup bourbon
  • 1/4 cup water
  • 2 tablespoons water
  • 1 tablespoon corn starch
  • Green onions and sesame seeds to serve

Instructions

  • In a large saute pan, heat olive oil over medium-high heat. Add chicken breast and season with salt and pepper. Heat until no longer pink, about 8-10 minutes. Use a slotted spoon to remove from pan.
  • In a small bowl, mix sambal oelek, soy sauce, ketchup, apple cider vinegar, brown sugar, bourbon, and 1/4 cup water. Pour into saute pan and let simmer for 5 minutes. 
  • In a small bowl, mix together 2 tablespoons of water and corn starch until smooth. Pour into bourbon mixture and mix. Let simmer until thickened, 2-3 minutes. Add in chicken and toss to coat. Let simmer 5 minutes. Serve warm.
