Combine chopped apples, lemon juice, light brown sugar, and apple pie spice in a medium pot. Cook over low-medium heat until the juice from the apple begins to boil.
2 cups apples, 2 tablespoons fresh lemon juice, 3 tablespoons light brown sugar, ½ teaspoon apple pie spice
Dissolve corn starch in water in a separate bowl and stir into apple mixture.

Bring to a boil again and allow mix to thicken.
Add in the caramel sauce at the end and pour into a serving dish and serve hot, room temp, or cold with Cinnamon Sugar Pie Chips.

Preheat the oven according to package directions and roll the pie crust out on a parchment-lined baking sheet.
1 package refrigerated pie crust
Brush the dough with melted butter.
3 tablespoon salted butter
Using a pizza cutter, cut the pie crust into small wedges.
Sprinkle with cinnamon sugar and bake for 10 minutes.

You can also serve this over cream cheese! Simply combine 8oz. softened cream cheese with a few tablespoons of brown sugar and a teaspoon of vanilla extract and add mixture to a wide bowl. Then top with the apple pie dip and enjoy!
