Slow Cooker Butter Chicken with coconut milk has tender, moist chicken in a creamy, savory sauce that's packed with authentic Indian flavor! Serve it up with rice or naan bread!

Ingredients  

  • 1 tablespoon salted butter
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 2 tablespoons grated ginger
  • 6 ounces tomato paste
  • 1 tablespoon garam masala curry powder
  • 2 teaspoons light brown sugar packed
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon turmeric
  • 12 ounces coconut milk can not carton
  • ½ cup chicken stock
  • 1 tablespoon lime juice
  • 2 pounds boneless skinless chicken thighs cubed

Instructions

  • Melt 1 tablespoon salted butter in a medium skillet over medium heat. Add the diced 1 yellow onion and saute until soft and translucent.

  • Add the minced 4 cloves garlic and 2 tablespoons grated ginger, cooking for an additional 2 minutes. Transfer to the slow cooker.

  • In a separate medium-sized bowl, stir together 6 ounces tomato paste, 1 tablespoon garam masala curry powder, 2 teaspoons light brown sugar, 1 teaspoon salt, ½ teaspoon ground black pepper, and ½ teaspoon turmeric.

  • Then whisk in the 12 ounces coconut milk , ½ cup chicken stock, and 1 tablespoon lime juice until there are no lumps. Transfer to the slow cooker.

  • Cut the 2 pounds boneless skinless chicken thighs into cubes and add the chicken to the crockpot and stir everything together.

  • Cook this on low heat for 5 hours. Garnish with cilantro before serving.
