Celebrate St. Patrick's Day in style with a Pot Of Gold Mocktail that is sure to impress your friends. This non-alcoholic drink is crafted with the perfect blend of juices, sugar, bitters, ginger beer, and a secret ingredient that gives it a frothy top and a velvety smooth mouthfeel. The garnishes add a touch of fun at the end of the rainbow!

Ingredients  


Instructions

  • Add 3 ounces orange juice, 2 ounces pineapple juice, ½ ounce fresh lime juice, 1 large egg white, 2 tablespoons powdered sugar, and 2 dashes Angostura bitters to a cocktail shaker.
  • Dry shake vigorously for 20 to 30 seconds.

  • Add ice and shake for another 15 seconds.

  • Then, strain the frothy mixture through a Hawthorne Strainer or Cocktail Strainer into a glass and add more fresh ice if desired.

  • Top off with 2 ounces ginger beer and stir with a bar spoon.

  • Slice a slit in the 1 citrus wheel and slide over the rim of the serving glass.
  • Slap 1 sprig fresh mint in your palms and add to the glass near the citrus.
  • Add 1 Airhead Extremes Belts Rainbow Berry Candy to a cocktail pick, poking it through both ends of the strip to make it look like a rainbow, and place it in the glass with the other garnishes.

  • Serve with a straw.

Notes

  • If you prefer not to use raw egg white in drinks, you can use 2 tablespoons of Collins bar sugar as a substitute for both the egg white and powdered sugar. Collins bar sugar can be found at most liquor stores and some supermarkets near the cocktail mixers. 
  • If serving in a shorter glass, you may want to cut a slit in the Airhead Extreme Belt and slide it over the straw to help hold it in place for appearances. 
  • The ginger beer is strong; you can add more if you prefer a bit more bite in your drinks, but we felt this ratio was well-balanced.
  • If using bar sugar, you'll shake WITH ICE from the start. Large ice cubes help the bar sugar froth a bit better, but nugget ice cubes look more like pieces of gold. We tested with both kinds of ice, and even the lesser foam was fine and still delivered the mouthfeel we were going for, so I personally prefer the nugget ice.
  • Technically, Angostura bitters does contain alcohol, but you add such a small amount that a recipe made with vanilla extract contains more alcohol than this drink. You can omit it if desired, and the drink will still be delicious but just a little different.
