Add 2 cups whole milk to a medium saucepan and bring to a low simmer over medium heat.
Remove from heat and add 2 bags earl grey tea and let them steep for 5 minutes.
If making Honey Whipped Cream, prepare it while the tea steeps. Add ½ cup heavy cream, ½ tablespoon honey, 1 teaspoon vanilla paste, 1 pinch salt to a metal mixing bowl, then whip with a hand mixer until thick and fluffy. Set aside until ready to use.
Remove the tea and return the pot to the heat and add in 4 ounces bittersweet chocolate, 2 tablespoons Dutch-processed cocoa powder, 2 tablespoons powdered sugar, 1 teaspoon vanilla bean paste, and ⅛ teaspoon fine sea salt and heat over medium heat, whisking constantly until the chocolate is melted.
Divide into two mugs and top with the prepared whipped cream, and enjoy.
Notes
Add 1 additional tea bag if a stronger Earl Grey flavor is desired.
This recipe makes two 8+ ounce portions or three 5+ ounce portions.
The drink is quite rich, but so creamy and delicious.
