Champagne Jello Shots

These Champagne Jello Shots are made with champagne, ginger ale, lemon juice, sugar, and gelatin and are so easy to whip up for your New Year's Eve and other celebrations!

Instructions

  • Add champagne, sugar, and lemon juice to a medium saucepan. Sprinkle with the gelatin and allow to bloom for 3 minutes, do not stir. 
  • Once the gelatin has bloomed, heat the mixture over medium-low heat and whisk until the gelatin has dissolved. Do not let the mixture boil.
  • Remove from heat and stir in the ginger ale, let carbonation fizz out and then evenly pour into shot glasses or small plastic cups and refrigerate for at least 2 to 3 hours until set.
  • Sprinkle with edible gold stars just before serving.

Notes

I've never had great luck with shaped silicone molds, I'd recommend disposable little condiment containers or doubling the recipe and pouring it into a lightly non-stick spray greased 8x8 baking dish and cut into squares. 
For a non-alcoholic version, replace the champagne with sparkling cider.
For a sweeter shot, try replacing the ginger all with sparkling grape juice.
