These easy 5 ingredient cookies are perfect for parties! They're made with a rainbow cake base, eggs, oil, and vanilla, then rolled in either sugar or sprinkles and baked to soft and chewy perfection!

Instructions

  • Add the cake mix, vegetable oil, eggs, and vanilla to a large bowl or stand mixer fitted with a paddle attachment and beat until combined. The dough will be fairly sticky
  • Chill the dough for 45 to 60 minutes.
  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Use a medium cookie scoop to portion out the dough and drop it in the bowl of sugar, then roll the ball in the sugar to coat and place on the prepared baking sheet at least 2 inches apart.
  • Bake for 8 to 9 minutes. Do not over bake these cookies, they will look puffy and slightly underdone, but they will finish cooking on the baking sheet after coming out of the oven.
  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

  • How To Store: You can store these Funfetti Cake Mix Cookies in an airtight container for up to one week!
  • Can I Freeze These Cookies? Absolutely! Freeze them in a Ziploc bag, making sure to squeeze the excess air out or by individually wrapping them in plastic wrap. Cookies will last for up to 3 months in the freezer.
  • Do I Have To Chill The Dough? Yes, chilling the dough is an extremely important step in this recipe! The dough will be too soft to shape and roll without chilling. Be careful not to chill the dough for more than one hour though! Any longer and the cookies will turn out hard and crunchy.
