Cut and tear the lobster meat into large chunks, closely checking for bits of shell. Keep the claws as intact as possible for the best presentation.
1 pound cooked lobster meat
Add the lobster meat and mayonnaise to a large bowl and stir until evenly coated.
2 tablespoons extra heavy mayonnaise
Heat a skillet over medium-high heat. Generously spread the softened butter on both sides of the hot dog rolls and place them in the skillet. Toast each side until golden-brown, using more butter as needed.
2 tablespoons salted butter, 4 New England-style hot dog rolls
Fill each roll with about 4 ounces of the lobster mixture. Garnish with chives. Serve with a lemon wedge, which can also be squeezed on top. Season with salt and pepper if desired and serve immediately.
