This Viral Rotisserie Chicken in a Bag with Rice is a quick and easy 20-minute dinner made with tender rotisserie chicken, fluffy rice, and bold, savory flavor with just the right amount of spice.

Ingredients  

  • 4 cups rotisserie chicken 560g, 1 bagged chicken
  • 4 cups hot cooked jasmine rice 570g, or long-grain white rice
  • ½ cup finely sliced scallions 50g
  • 3 tablespoons low sodium soy sauce 45mL
  • 2 teaspoons sesame oil 10mL
  • 1 tablespoon unseasoned rice vinegar 15mL
  • 2 tablespoons chili crisp 30g, plus more for garnish
  • 2 tablespoons furikake 16g, plus more for garnish
  • crispy fried onions for garnish
  • lime wedges for serving

Instructions

  • Cook rice or heat up leftover rice to use.
  • Remove 4 cups rotisserie chicken from the bag, keeping the juices inside.
  • Shred the chicken into bite-sized pieces. Remove the bones, cartilage, and any thick pieces of skin. Add the shredded chicken back to the bag with the juices.
  • Add the 4 cups hot cooked jasmine rice, ½ cup finely sliced scallions, 3 tablespoons low sodium soy sauce, 2 teaspoons sesame oil, 1 tablespoon unseasoned rice vinegar, 2 tablespoons chili crisp, and 2 tablespoons furikake directly to the bag.
  • Seal the bag, then gently shake, squeeze, and turn the bag until everything is evenly mixed.
  • Open the bag and taste the rice. Add a little more soy sauce if it needs salt, or add a squeeze of lime if it tastes too rich.
  • Transfer the chicken and rice to bowls or a serving dish. Top with crispy fried onions, additional furikake, and chili crisp. Serve with lime wedges.

Notes

  • Use brown rice, basmati rice, microwave rice, or leftover rice. Warm the rice before adding it to the bag. Use hot rice so the sauce coats everything smoothly. Cold rice can clump and make the sauce sit on the outside.
  • Add shredded carrots, cucumber, edamame, steamed broccoli, or sautéed cabbage after mixing if you want more veggies.
  • Use crushed wonton strips or toasted panko instead of crispy fried onions.
  • Add a fried egg, soft-boiled egg, or jammy egg on top to make it more filling.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • If the rice tastes bland, it probably needs more soy sauce or lime. Add a small amount, mix again, then taste before adding more.
  • If the bag has a hole or feels weak, transfer everything to a large zip-top bag. Don’t try to shake a torn rotisserie bag.
  • Use both white meat and dark meat for the best texture. The breast keeps the recipe lean, and the thigh meat adds more moisture.
  • Don’t skip the rice vinegar or lime. The chicken, sesame oil, chili crisp, and crispy onions need a little brightness.
