Instructions

  • Preheat oven to 350 degrees F. Line a muffin pan with liners and set aside.
  • In a large bowl, combine pumpkin, eggs, vegetable oil, vanilla, milk, and sugar.
  • In a separate bowl, whisk together flour, baking soda, salt, and spices.
  • Add the dry ingredients to the wet ingredients and mix until combined.
    (Optional) Fold in chocolate chips
  • Add about 1/4 cup of batter to each liner in the muffins pan and bake for 17 to 20 minutes or until toothpick comes clean from the center. Repeat twice more to finish the batter.
