Ingredients

  • 2 tablespoons olive oil
  • 1 large white onion diced
  • 2 cloves garlic minced
  • 4 medium sweet potatoes peeled and cubed
  • 5 cups chicken stock
  • 1/2 cup heavy cream
  • 1/4 teaspoon cayenne pepper
  • salt to taste
  • ground black pepper to taste
  • crème fraîche or sour cream garnish
  • 10 strips thick-cut bacon cooked and crumbled
  • chives garnish

Instructions

  • Add olive oil and onions to a large pot over medium-low heat and cook until onions are translucent, about 5 minutes.
  • Add garlic and cubed potatoes to the pot and stir to combine. Add the chicken stock, just enough to cover your potatoes, you may have some left over.
  • Simmer over low heat for 30 to 40 minutes until potatoes are extra soft and almost falling apart. Remove from heat.
  • Use an immersion blender to blend the mix into a puree. Mix in the heavy cream, cayenne, salt, and pepper.
  • Serve hot with crème fraîche, bacon crumbles, and chives.
