-bucatini pasta -fresh cracked peppercorn -garlic cloves -grated pecorino -grated parmesan -freshly chopped parsley

Boil the pasta for 9 minutes. Do not drain.

Meanwhile, add the cracked pepper and garlic to a heated pan. Roast until fragrant. Add some pasta water to the pan.

Grate the cheeses into a bowl and add a small amount of pasta water. Stir until the cheese is slightly melted.

Using tongs, remove the pasta from the water and place into the pan. Add 1/2 cup pasta water. The pasta will finish cooking and mix with the pepper and garlic. Add the cheeses.
