I’m way behind due to some failed recipes, a crazy workload, and some travel, but sometimes I think those things remind me that I just need to keep it simple sometimes. These Strawberry Mousse Cups are an easy dessert! A fluffy strawberry mousse is served in chocolate shells for a fun and simple treat that's great for Valentine's Day, baby showers, bridal showers, or anything else!

Ingredients
  

  • 0.6 oz. freeze dried strawberries
  • 1 cup heavy cream
  • 1/4 cup confectioners' sugar
  • 2 tbsp instant vanilla pudding mix dry
  • 9 Chocolate Cups I used ChocoMaker brand but you can make them at home with this recipe.
  • 9 strawberry slices
  • Sprinkles optional

Instructions

  • Add freeze dried strawberries to a food processor and pulse until a fine dust forms.
  • In a large bowl or stand mixer fitted with a whisk attachment, beat the heavy cream, confectioners' sugar, and pudding mix on medium-high for about 2 minutes. Add in the freeze dried strawberry powder and beat until light and fluffy.
  • Pipe mousse into chocolate cups and garnish with a slice of strawberry and sprinkles if desired.
  • Consume within a few hours.

  2. Hi I don’t have a food processor and I was wondering if a strawberry powder would be a good substitute?

    1. Not sure what strawberry powder is – milk powder? Jello powder? Freeze dried strawberries?

  3. How much of this would I have to make to fill an 8″ 3 layer cake? Thank you.

    1. This recipe should be enough to get a nice filling for that size cake. You could double the recipe if you want the filling really thick.

  4. What size and style piping tip did you use to get that effect in the photo? If you remember, since this is 3 years past the time. 🙂

  5. I am obvijennyously doing something wrong when making these. I have tried several times and my mouse does not stay up in the cups like yours does and when I put the strawberry piece on top it completely flattens the mousse. Please help me. I need 50 of these for this Saturday

    1. Hi Jenny, it sounds like maybe the mixture needs to be whipped a bit longer. You could also try adding an additional tablespoon of pudding powder (you’re not making the pudding, just using the powder, correct?)

    1. Hi Paula, you should be able to find that at Trader Joe’s and Target. Other grocers may carry them as well.

  7. Is it possible to make this recipe using fresh strawberries instead of freeze-dried?

    1. Hi Jen, unfortunately, I have never tested it with fresh strawberries, but I worry they might be too wet and heavy for this recipe.

    I made these today for a baby shower. A big hit! People loved them! Trader Joe’s carries freeze-dried fruit, but they were out of strawberry, so I made raspberry. Still yummy! But I put a strawberry slice on top anyway. Also, if you want to purchase pre-made chocolate cups you better order because I could not find these anywhere. So I made my own the night before. I just used Wilton’s chocolate melts from Michael’s and painted it on mini cupcake liners with a little pastry paint brush. Chilled and touched up and chilled again before filling. I removed the liners before filling. Thanks for the recipe!

    1. The raspberry is another favorite of mine! You should try my chocolate cupcakes with that raspberry as a frosting… so good! I’m so glad everyone enjoyed them and you were able to make your own cups!

    Do you mean 6 ounces, and not 0.6?

  12. I made these today. They were AMAZING!! I gave some to friends, and my family ate the remainder. They were easy to make and utterly delicious.

    1. Hi Cathy,

      Are you using store bought chocolate cups or making your own? The store bought ones hold up pretty well. As for the mousse, they’re whipped cream based and are best served as soon after making as possible to maintain their fluffiness. If you have to store them with the cream, you definitely want to store them in the fridge, but the mousse can stiffen a bit. I would suggest making a test batch and running through it with a timeline similar to what you’re planning for the rehearsal dinner so you have an idea of how they’ll turn out.
