Fizzy Raspberry Lemonade

I am a huge lover of specialty fruit lemonades! From Blueberry Lemonade to Strawberry Lemonade and even Berry Lemonade, there is always a perfectly tart yet fruity lemonade in my hand all summer long!

But of course, it can’t be store-bought fake lemonade that’s filled with dyes and artificial sweeteners. Instead, it has to have REAL fruity flavor, just like this raspberry lemonade that’s made with a 3-ingredient homemade raspberry simple syrup.

Along with the homemade syrup, the real key to this delicious raspberry lemonade is the club soda; it adds a great fizz and makes the drink really sparkle! I also love the raspberries’ pulpiness and how it really brings the bright, fruity flavors to life!

Sparkling Raspberry Lemonade Ingredients

Raspberry Simple Syrup – To ensure this recipe is bursting with the best authentic raspberry flavor, it’s made with an easy-to-make simple syrup. This is made in just 30 minutes by cooking down frozen raspberries with granulated sugar and water.

Lemonade – Pairing with the fruity raspberry simple syrup is the homemade lemonade base! To make this, you’ll need lemon juice; fresh-squeezed is best, as well as cold water, club soda, lemons for garnishing, and ice for serving.

How To Make Sparkling Raspberry Lemonade

1. Prepare the raspberry simple syrup by combining frozen raspberries, granulated sugar, and water in a saucepan.
2. Simmer the syrup mixture over medium heat until the sugar dissolves and the berries are bursting.
3. Wash the lemons and then slice them in half. Press the lemons in a citrus press to release their juices into a liquid measuring cup.
4. Remove the homemade raspberry simple syrup from the stovetop and allow it to cool. Then strain the syrup through a fine mesh sieve to remove any chunks and pulp.
5. Combine the lemon juice, cooled raspberry simple syrup, cold water, and club soda in a large pitcher. Stir gently to thoroughly combine the lemonade ingredients.
6. Slice two washed lemons and transfer them into the pitcher as a garnish.
7. Serve the Sparkling Raspberry Lemonade in glasses with ice and a straw; enjoy!

Rebecca’s Raspberry Lemonade Tips

  • To get the most juice out of your lemons, firmly roll each lemon on the counter using the palm of your hand. Once rolled, microwave each lemon for about 10 seconds, then slice each lemon in half and use a citrus press to squeeze the juice.
  • Do not add club soda until ready to serve.
  • If you have any leftover raspberry simple syrup, you can store it in an airtight container or a jar with a tight lid, such as a mason jar. The simple syrup can be stored for up to 2 weeks and used as a dessert topping over a slice of New York Style Cheesecake.

Easy Sparkling Raspberry Lemonade

Ingredients
  

Raspberry Simple Syrup

  • 16 ounces frozen raspberries
  • cups granulated sugar 300g
  • 1 cup water 240mL

Lemonade

  • 2 cups lemon juice about 10-12 lemons
  • 2 cups raspberry simple syrup whole batch from above
  • 4 cups cold water 960mL
  • 4 cups club soda 960mL
  • 2 lemons sliced for garnish
  • ice

Instructions

  • Prepare the syrup by combining 16 ounces frozen raspberries, 1½ cups granulated sugar, and 1 cup water in a small saucepan.
  • Bring the raspberry syrup mixture to a simmer over medium heat. Simmer for 10 minutes; the sugar should have dissolved, and the berries should be bursting.
  • While the simple syrup simmers, wash the 2 cups lemon juice, then slice them in half and use a citrus press to squeeze the juice out of the lemons into a liquid measuring cup.
  • Remove the syrup from heat and allow to cool in the pot for 20 minutes, then strain through a fine-mesh sieve, squeezing the berries to extract as much juice as possible. You can also just use the whole recipe without straining, I love the pulp from the berries in this!
  • In a pitcher, combine the lemon juice, 2 cups raspberry simple syrup (you may have a little leftover), 4 cups cold water, and 4 cups club soda.
  • Slice 2 lemons into 8 slices and add 4 to the lemonade, then stir to combine.
  • Serve in a highball glass with ice and garnish each with a lemon slice. Serve with a straw.

Notes

  • This lemonade is on the tart side; feel free to increase sugar to 1 3/4 cups for a sweeter option.
  • If you prefer a non-carbonated lemonade, just omit the club soda and replace it with more water.
