As much as I enjoy baking from scratch, every now and then I just want something that I can whip together quickly without having to sift confectioners’ sugar or clean my stand mixer three times for different components of one recipe. These Birthday Cake Blondies are one of those easy treats that I just love to make.
Nope, it’s nobody’s birthday, just kind of had a craving for something cake batter-y and my Funfetti Birthday Cake is a little too intense for a quick treat. These birthday cake blondies are sweet and delicious and super easy to make, plus the recipe creates a pretty minimal amount of dishes… now that’s a recipe worth celebrating, am I right?! Plus, SPRINKLES! I love rainbow sprinkles, they make everything way more fun!

Birthday Cake Blondies
- Preheat oven to 350 F, grease a 9x9-inch baking pan and set aside.
- Mix together cake mix, vegetable oil, milk, egg, and vanilla extract. The batter should be well mixed but stiff.
- Transfer batter to the prepared baking pan and spread evenly with a rubber spatula. Bake for 30 to 35 minutes until toothpick comes clean from the center.
- Blondies should rest for a couple of hours before cutting for best results.
