Buffalo Chicken Dip

Yes, I know, Buffalo Chicken Dip. I’m pretty sure the only thing in the world that there are more recipes for is Chocolate Chip Cookies. So why am I joining the ranks with my own dip if there’s already a million out there? Because Buffalo Chicken Dip, also known as crack dip (for good reason), is awesome!

This Baked Buffalo Chicken Dip is made with real cream and blue cheeses, rotisserie chicken, hot sauce and spices for a sensational appetizer that's sure to please! Plus, it's ready in less than 30 minutes!

Why is mine better than all the others? Well, first of all, forget the canned chicken, it just gives me the heebie-jeebies. We’re going to keep things real, but still simple, with rotisserie chicken! Then we’re going to use whipped cream cheese instead of blocks because seriously, who has time to wait around for the damn thing to soften. And then, we’re going to add blue cheese because it ain’t real buffalo chicken without the tang of blue cheese.

Finally, we’re going to bake this thing! Can I just say that I am so very tired of dips cooked in crockpots? It’s easier they say, it’s less mess they say… have you ever tried to clean a crockpot? It’s a giant pain in the tuchus! This dip is so easy, it only takes 5 minutes to prep and then you pop it in the oven for 20 minutes, everyone has time for that! Plus, you can bake it in the same dish you serve it in!

When it comes to entertaining, I like to split my dip up into two separate dishes. Having two allows me to spread it out across the party since we know everyone tends to mingle around the crack dip. But the other reason I love to make two servings of Buffalo Chicken Dip is that with birthdays, football games, and holiday parties every weekend, I can bake one up one day and the other up the next day! Less work is always the goal, right? See! This is the ultimate party dip, or you can eat one of them by yourself for lunch on a Monday like I did! Clearly, I’m addicted to the crack dip!

Ingredients
  

  • 8 oz. whipped cream cheese
  • 1/2 cup blue cheese dressing
  • 1/2 cup hot sauce
  • 4.4 oz. Castello Blue Cheese crumbled
  • meat of rotisserie chicken shredded
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup shredded mozzarella cheese
  • parsley for garnish

Instructions
 

  • Preheat oven to 350 degrees F.
  • Combine cream cheese, dressing, hot sauce, crumbled Castello blue cheese, shredded chicken, and seasonings in a medium bowl and mix until well blended. Separate into two oven safe baking dishes and sprinkle with mozzarella cheese and chopped parsley. Bake for 20 minutes or until dip is bubbly and cheese has melted.
  • Serve hot with chips or veggies.

    If j was to make this all in one pan would the bake time still be 20 mins?

      Probably 20-25, just make sure your cheese is melted on top and you should be good.

    This looks so good! My buffalo chicken dip recipe is one of the slow cooker versions & I’m the one always stuck cleaning it out so I need to try your way.

    Also, 90% of things that come in cans give me the heebie-jeebies. I can handle a few veggies but meat?? never. puke. totally agree.
