My biggest regret from our trip to Ireland almost two years ago, other than not having more time there, is not visiting the Guinness (and Jameson) brewery/distillery.
Which, of course, was because we didn’t have enough time.

These are a soft and chewy cookie recipe to begin with and because of this, it’s very important that these cookies are not made on days when there’s a lot of humidity or rain because the cookies will never set.
This is a good rule of thumb to follow for any no bake cookie recipe, but these ones especially.

Dark Chocolate Guinness No Bake Cookies
- Add butter, sugar, and Guinness to a large pot and bring to a boil. Keep on a rolling boil for 2 minutes.
- Remove from heat and stir in remaining ingredients, once fully combined, plop large spoonfuls onto wax paper and let set for about an hour.
