Harry Potter Butterbeer Muddy Buddies

Harry Potter Butterbeer Muddy Buddies are made with rice Chex cereal, butterscotch, butter, toffee, and powdered sugar for a sweet and delicious snack! A fun twist on my Classic Muddy Buddies recipe this Butterbeer version takes this highly addictive dessert recipe to a whole new level! The key to this recipe is the imitation butter flavoring/extract. I know, I know. But seriously — it really brings out the BUTTER in butterbeer. They make a great treat around the holidays and I love coming up with fun new flavors!

How To Make Butterbeer Muddy Buddies

  1. Measure the cereal into a large paper bag.
  2. In a medium microwave-safe bowl, melt the butterscotch chips on 50% power for 30-seconds then stir and repeat in 15-second increments until the chips are melted and smooth. Do not overcook or the butterscotch will scorch!
  3. In a small bowl, melt the butter in the microwave until fully melted. Whisk into the butterscotch along with the vanilla and butter flavoring.
  4. Dump the butterscotch mixture into the brown paper bag with the cereal and the Toffee Bits and shake to coat! Spread on a cookie sheet and allow to cool for 20 minutes.
  5. Add the mixture back into the bag (you may need a new bag if the first one is too buttery), and add the powdered sugar. Shake again to coat. Serve, sprinkled with lightning bolt sprinkles!
