These Pumpkin No Bake Cookies are such an easy fall dessert recipe!

If you’ve seen or made any of my no-bake cookie recipes before, you know they hold a special place in my heart. Probably more than any other dessert because no-bake cookies are what mama always made me.

It’s funny, though, because I’ve still never posted my recipe for classic no bake cookies, I should really get on that, eh? But these Pumpkin No Bake Cookies are a real treat!

These Pumpkin No Bake Cookies are crazy delicious and so simple to make! Made with oatmeal, pumpkin spice pudding mix, sugar, butter, and more, these cookies will be a hit at home, the office, or a party! Don't let fall pass you by without making a batch!

And today’s no bake cookie recipe is far from a classic, it’s a fall twist on the traditional cookie we all know and love with a seasonal flavor we can’t get enough of this time of year! Pumpkin Spice!

And trust me, you won’t be able to get enough of these cookies either!

How To Make Them:

  1. Add butter, sugar, milk, and vanilla to a large pot and bring to a boil.
  2. Keep on a rolling boil for 2 minutes.
  3. Remove from heat and stir in remaining ingredients.
  4. Once fully combined, plop large spoonfuls onto wax paper.
  5. Let set for about an hour until firm.

It’s a small batch recipe, only yielding about a dozen good-sized cookies, and sometimes I think it’s good to have a recipe on hand that doesn’t make a ton.

Especially since you’re going to want to eat all of them and they can be quite dangerous for the waistline.

And I definitely probably shouldn’t be eating them a week before I leave for Jamaica, but they’re wicked good and it’s too late to shed the pounds so I’m just going to enjoy the sugar now and embrace the soft stomach and sun next week!

Plus, there are only so many weeks where it’s acceptable to indulge in all things pumpkin and how could I resist these chewy, soft, sugary, Pumpkin No Bake Cookies! Bottom line, I can’t, they’re addictive.

And I love how easy they are to make, sure they take a little time to rest and cool, but in the meantime, you can like the spoon and scrape down the sides of the pan for all the good stuff to tide you over while you wait 😉

I’ve found the Jell-O Pudding mix at my local grocers (check the seasonal food dsiplay at Walmart). But you can also order it on Amazon. Ingredients
  

  • ¾ cup unsalted butter
  • 2 cups granulated sugar
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • ¼ cup powdered vanilla coffee creamer
  • 1 3.4-ounce box instant pumpkin spice pudding mix (dry)
  • 1/8 teaspoon salt
  • 1/4 teaspoon pumpkin pie spice
  • 4 cups 1-minute oatmeal

Instructions
 

  • Add butter, sugar, milk, and vanilla to a large pot and bring to a boil. Keep on a rolling boil for 2 minutes.
  • Remove from heat and stir in remaining ingredients, once fully combined, plop large spoonfuls onto wax paper and let set for about an hour.

    I have already made these cookies 4 times and they are a huge hit! I also had chocolate chunks to them. Do you think they’d be any better with brown sugar?

    I soooo wish an “*” had been placed by pudding with note pudding most likely needed to be ordered! As this is an excellent recipe!! And we had planned to grab ingreds to make on Sunday to share. We checked 3 stores! No Pumpkin Spice Jello pudding ?. I re-studied recipe indepth, then realized there was separate link where could order Jello Pudding (which am grateful for but didn’t realize in advance). Hope can order and try again another time! For future idea, plz add comment about needing to probably order?

      Hi Kassie, I make these frequently in the fall and have never had to order online, although that is an option. I usually find the pudding at my local grocer or at Walmart, it’s usually with the seasonal baking items display. I’m sorry you had trouble finding it locally but I hope you get a chance to make them soon!

      You can use vanilla instant pudding and increase the pie spice to 3 tsp.

    I didn’t have vanilla flavored powdered coffee creamer on hand, so I used chocolate flavored powdered coffee creamer instead and they turned out great!

    52 in carbs is that the whole dozen? Any variation to make closer to a sugar free as possible by chance

      Hi Michelle, that is per serving size, so just 1 cookie. I’m not sure you could make these sugar free as the sugar is what binds them together. I’ve never tried it with a sugar alternative but it might work.

    I am going to try these, after I get the ingredients. I think it would be fun to add pumpkin M&M’s to the mix when adding the oatmeal. You could also add raisins or dried cranberries.

    I saw this recipe and wanted to try it but sadly my store is not yet carrying the pumpkin pie spice pudding. So I improvised and used caramel pudding and apple pie spice. Haven’t tried them yet but they look and smell delicious!
