Bring some excitement to your kids this March by serving up these simple St. Patrick’s Day Dessert Parfaits! The vibrant green pudding layer and fun candy toppings are guaranteed to light up their faces!
Yes, it’s a super fun, dressed-up recipe but it’s also incredibly delicious! Specifically the green vanilla pudding layer! It’s made with an instant pudding mix and heavy cream, making it more like a heavenly mousse layer!
If the edible decorations and mousse-like layer don’t get your attention then certainly how quick and easy these are to make will! In just 30 minutes all the layers are made, arranged in mini cups, and then finished off with the candy toppings!

Ingredients For St. Patrick’s Day Dessert Cups
This St. Patrick’s Day Dessert Parfaits Recipe has a stack of four simple and yummy layers! First the chocolate pudding, then a layer of green pudding followed by Oreo crumbs, and then finished off with whipped topping. To make each layer you’ll need:
- Chocolate pudding – For this, you’ll need a box of instant chocolate pudding mix and whole milk.
- Green Pudding – This layer calls for a box of instant vanilla pudding, heavy cream, and vanilla extract. Then you’ll use food coloring to dye the pudding green.
- Oreo Crumb Layer – I like using double stuff Oreos for this! But feel free to grab your favorite flavor of Oreos to use!
- Whipped Topping – Take it easy and grab a container of Cool Whip! Or go the extra mile and make your own homemade whipped cream!
- Decorations/Toppings – Rainbow Airheads Xtremes, chocolate gold coins, sprinkles, and Oreo crumbs.

How To Make St. Patrick’s Day Dessert Cups
- Beat the milk and chocolate pudding mix together on low. Then place it in the refrigerator to set up.
- Combine the heavy cream and vanilla pudding mix together in a separate bowl. Beat the mixture on low speed and then gradually increase the speed until the mixture becomes light and fluffy.
- Beat in the green food coloring and vanilla extract.
- Crush the Oreos in a Ziploc bag or in a food processor until fine crumbs form.

How To Assemble Pudding Cups
- Layer the chocolate pudding into each cup. Afterward, layer on the green whipped pudding.
- Cover the green pudding with a layer of crumbled Oreo cookies. Next, add a layer of whipped topping.
- Repeat these layers once more. Be sure to end with the whipped topping layer!
- Garnish with a rainbow airhead that’s arched like a rainbow, a chocolate gold coin, sprinkles, and more Oreo Crumbs! Chill and then serve your St Patrick’s Day Pudding Cups!

Rebecca’s Tips
- Redi Whip will not work with these dessert cups. It will just melt and flatten. Instead, make sure you use a whipped topping such as cool whip. It’s more stabilized and will hold up between the layers in these Oreo Pudding Cups.
- Adding vanilla extract offsets the sometimes bitter taste of the food coloring, so I don’t recommend skipping it.
- The dessert cups can be made ahead of time but keep in mind that the cookie will lose its crunchy texture. If you do decide to make these ahead of time I’d recommend just leaving the tops bare. Then just add the decorations before serving.
- For a minty version of these dessert cups, simply exchange the vanilla extract in the green pudding layer and instead use mint extract. Then you could also use mint Oreos for the crushed cookie layers!
- For a dairy-free dessert, I’d suggest looking for a dairy-free pudding mix or purchasing a dairy-free ready-made pudding. Instant pudding mixes, such as the Jell-O brand, just don’t generally work well with dairy alternatives.
- You can use less heavy cream in this recipe for a lighter version. To do so, you can mix together just 1 cup of heavy cream and 1 cup of milk. First, whip the heavy cream by itself first. Then mix the pudding and milk together in a separate bowl. You can then add the mint and green food coloring if you’d like. Afterward, fold the whipped cream into the pudding mixture gently.
Storage Instructions For Pudding Dessert Cups
Cover the cups tightly and pop them in the fridge to store. Then enjoy them for up to 3 days! However, I do have to say, I find these are best when eaten the same day that they’re made.

Equipment
- Medium bowl
- Electric hand mixer
- Clear glasses (or small jars) to use as pudding cups
Ingredients
Parfait
- 1 (3.9oz.) box instant chocolate pudding
- 2 cups whole milk
- 1 (3.9oz.) box instant vanilla pudding
- 2 cups heavy cream
- ½ teaspoon vanilla extract or mint, depending on your tastes
- Green food coloring
- 8 Oreo cookies feel free to pick your favorite flavor
- 8 ounces whipped topping thawed
Decorations/Toppings
- Airheads Xtremes Rainbow Candy
- chocolate gold coins
- sprinkles
- oreo crumbs
Instructions
- Add the chocolate pudding mix and milk to a medium mixing bowl and use a hand mixer or whisk to beat for 2 minutes. Place in the refrigerator for 5 minutes to set up.1 (3.9oz.) box instant chocolate pudding, 2 cups whole milk
- In a separate bowl, add the vanilla pudding mix and heavy cream and beat together at low speed. Then gradually increase speed and mix until the mixture is light and fluffy. - Place a thin layer of the chocolate pudding into each of your 4 cups. Then layer on some of the green whipped pudding. Next, add a layer of crumbled oreo cookies. Then a layer of whipped topping.
