TikTok has us breaking all the breakfast rules with this Ice Cream Pancakes recipe and we’re not mad about it! Turns out you CAN have ice cream for breakfast, we just have to melt it down first and then bake it into pancakes!

Are you wondering how ice cream can possibly turn into pancakes? Ice cream is made with cream/milk, sugar, and eggs (sometimes), so when it combines with self-rising flour, which has leavening agents, you end up with everything you would have in a traditional pancake mix.

Genius AND scrumptious! This is a recipe that kids will LOVE and the whole family will have fun with since you can experiment with lots of different ice cream flavors!

Ingredients For Ice Cream Pancakes

To make a batch of these TikTok Ice Cream Pancakes we need just 4 ingredients, yes, they’re that simple! First, grab a container of ice cream that’s high-quality with minimal ingredients. This is where you can have fun with the flavors by choosing chocolate, strawberry, even chocolate peanut butter, or cookie dough!

Next, we need self-rising flour and vanilla extract to finish off the pancake batter and salted butter for cooking. It’s important to note that the flour must be self-rising flour. Self-rising flour has leavening agents in it whereas all-purpose flour does not, therefore using all-purpose flour will not work in this recipe.

We tested this recipe with both ice cream that contained egg (Haagen Dazs) and ice cream that didn’t (GIfford’s), and both yielded deliciously fluffy pancakes!

How To Make Pancakes With Ice Cream

  1. Combine self-rising flour, vanilla ice cream, and vanilla extract in a bowl. Stir the mixture together until only a few lumps remain.
  2. Heat a portion of butter in a nonstick pan over medium-high heat.
  3. Add a scoop of the pancake batter to the hot, buttered pan.
  4. Reduce heat to low and continue cooking the pancakes until the edges of the top begin to bubble and the bottom becomes golden brown. Then flip the pancake and continue cooking.
  5. Re-butter the pan and repeat the process until all of the ice cream pancake batter is gone.

  • Ice Cream Quality – It’s best to use an ice cream brand that has minimal and simple whole ingredients. We used Haagen-Dazs vanilla ice cream, and it worked wonderfully!
  • Measuring – It’s easiest to measure the ice cream in grams on a kitchen scale before it melts.
  • Melted Ice Cream – For consistent results, it’s best to melt the measured ice cream at room temperature before making the batter.
  • Vanilla Extract – The added extract gives the pancakes a nice boost of flavor.
  • Portioning – When portioning out the batter to cook, I used a #20 scoop which is about 3 tablespoons or 1.5 ounces. The pancakes come out to be about 4-inches across.
  • Cook Them With Butter – This gives them a salty exterior that blends deliciously with the sweet pancake.
  • Flavors – Try another ice cream flavor to make fun variations!

How To Serve TikTok Ice Cream Pancakes

Devour these for breakfast, make them for a fun brunch with a fun toppings bar, or treat the family to them for a breakfast for dinner type of night! Serve a stack up with popular breakfast sides such as bacon, sausage, and fresh fruit.

How To Store Pancakes

Transfer leftover pancakes in an airtight container or a large Ziploc bag with the excess air squeezed out of it. Then store the Ice Cream Pancakes in the fridge to enjoy for 3 to 4 days.

For longer storage you can also freeze a batch of these pancakes! Making them a great make-ahead breakfast for those busy school rush mornings. Simply pop them in the toaster or microwave, top them with syrup, and enjoy!

To freeze these TikTok Pancakes, wrap them individually in plastic wrap and then again in aluminum foil. Then store them in the freezer to eat up within 2 to 3 months.

  • Stir together 1 cup self-rising flour, 1 cup vanilla ice cream, and 1 teaspoon vanilla extract until combined and only some lumps remain.

  • Add some of the 2 tablespoons salted butter to a nonstick pan and heat over medium-high heat.
  • Once the butter is melted and the pan is hot, scoop some of the pancake batter onto the pan; you should be able to cook 3 or 4 at a time in a 12-inch skillet. I used a #20 scoop, which is 3 tablespoons or 1.5 ounces.

  • Butter is optional but does add flavor. You can use non-stick spray if preferred.
  • The pancakes, as measured, are about 4 inches across.
  • This is a smaller batch, but you can easily double it to make more small pancakes or larger pancakes.
  • We tested this recipe with both Haagen-Dazs and Gifford’s brand ice creams, and both worked great, even though one contained egg and one didn’t. 
  • Try mixing up the flavor by using different ice cream flavors!
