I know, I know, we’re a little past the point in the year when you guys are eager for salads and fresh side dishes. But better to be a little late to the party than not show up at all without a word. If you’re like me, though, you’re still squeezing the last bit out of summer and planning those last few barbecues. This past weekend was one such event for us and I just had to bring this new-to-me recipe to the party!
A few weeks ago at a family get together, my mother in law whipped up this salad. Normally, I’m not a huge fan of broccoli slaws and salads because I always find them to have an unpleasant amount of mayo and vinegar. I reluctantly tried a little bit… don’t want to upset the mother in law, am I right?
Well, needless to say… I went back for seconds and then another two bowls while I caught up on Outlander that night! It was sooooo good! I asked her where she got the recipe and she said one of her best friends had been making it for years. Clearly, I’ve been missing out.
So what was it about this broccoli salad that made me actually like love it?
Yup, that’s right… this fresh salad has sugar in it and it completely changes the dynamic of the dressing… for the better! It’s not sweet like a dessert, but it cuts the mayo and vinegar perfectly and pairs nicely with the saltiness of the bacon. Add the crunch of the broccoli and a few extra bits of deliciousness and this salad is a real winner!
I loved that I could make this salad up in less than 20 minutes and I didn’t have to cook anything like you do with pasta and potato salads.
So, it might be late in the season, but I urge you to make an excuse to whip up this salad! You won’t regret it and your friends and family will be begging for the simple and sweet recipe!
