Rhubarb Simple Syrup
This 3-ingredient Rhubarb Simple Syrup adds a delicious burst of slightly sweet, tart flavor to fun summer drinks, delicious desserts, and even heaping scoops of vanilla ice cream! Summer’s Favorite Simple Syrup
I first fell in love with the idea of Rhubarb Simple Syrup during a trip to Dublin while enjoying Rhubarb Lemonade at a restaurant called Crackbird. After that first sip, my mind was already racing on how I could recreate that refreshing flavor back home.
The answer: Rhubarb Simple Syrup. The perfect flavor balance between sweet and tart. And one that wouldn’t be limited to just lemonades.
Made with only three ingredients on the stove top in 20 minutes or less, this Rhubarb Simple Syrup can be used on just about anything! It’s a great cocktail addition for mixologists, a tasty topping for dessert drizzles, and yes, it’s also perfect for a refreshing lemonade or iced tea!
Ingredients For Rhubarb Simple Syrup
Making homemade rhubarb simple syrup is… well, extremely simple! All you need is rhubarb, water, and granulated sugar. Fresh or frozen rhubarb will work just fine.
If you do opt to use frozen rhubarb, it will just need to thaw at room temperature first. This will allow any excess liquid to be removed to prevent it from watering down the simple syrup during the cooking process.
How To Make Rhubarb Simple Syrup
- Add chopped rhubarb, granulated sugar, and water to a medium pot and cook over medium-low heat.
- Simmer the simple syrup mixture until the rhubarb becomes soft.
- Strain the rhubarb from the liquid, transferring the simple syrup into an airtight container.
Rebecca’s Tip
- For a richer syrup, you can use a 2:1 ratio, two parts sugar and one part water.
- Once the rhubarb softens while cooking, use a potato masher to smoosh the rhubarb in the pot while it continues cooking. This will encourage the rhubarb to release more of its flavor juices.
- Use a fine mesh sieve to strain the finished simple syrup to remove any rhubarb chunks. Straining the mixture will give you a perfectly smooth syrup!
- I’d recommend using a kitchen funnel when transferring the simple syrup liquid into a bottle for storage.
How To Store Rhubarb Simple Syrup
Store Homemade Rhubarb Simple Syrup in an airtight container, tightly sealed jar, or bottle. Then transfer the simple syrup into the refrigerator to use for up to 2 weeks, giving you plenty of time to enjoy it in many different ways!
This Rhubarb Syrup can also be frozen for longer storage, preserving the flavor of summer longer! To freeze, first allow the simple syrup to completely cool and then transfer it into an airtight container.
Then store the homemade simple syrup in the freezer for up to 6 months.

Rhubarb Simple Syrup
Ingredients
- 2 cups Rhubarb chopped
- 3/4 cup Sugar
- 1/2 cup Water
Instructions
- Add rhubarb, sugar, and water to a medium sized pot and cook over medium-low heat at a low simmer for 10-15 minutes until rhubarb is soft.
- Strain and store in an air tight container in the fridge for up to 3 weeks.
